Double-sided documents scanned on a single-sided scanner often come out as all fronts followed by all backs, and multi-file scans end up in the wrong sequence. The Pages panel shows thumbnails so you can see what's on each page while you move it.

Because page organisation lives in the same editor as annotations, you can reorder pages, add a signature on the last page and number the pages in one pass. Page numbers are added at save time, so they always follow the final order.
Building one document from several
Insert PDF adds every page of another file after the current page, so you can assemble an application from a cover letter, CV and certificates, then move each page into the order the recipient expects. Insert a blank page where a divider or a page to sign by hand is needed, and rotate landscape pages so they read correctly.
